Ingredients
- 8 large Yukon Gold potatoes, cut into bite-sized pieces
- 3 tablespoons OPS Spice Blend
- 3 cups oil for frying
- 1 cup olive oil
- 1 cup mayonnaise
- 1 tablespoon chipotle powder
- 1 lime, juiced
Instructions
- Preheat oven to 350°F.
- Place diced potatoes in a medium saucepan, cover with cold water, and add 2 tablespoons kosher salt.
- Bring to a boil, then immediately turn off the heat and strain the potatoes.
- Toss the strained potatoes with olive oil and arrange on a sheet pan.
- Roast in the oven for 10 minutes, or until the edges begin to brown.
- In a medium saucepan, heat 3 cups of oil over medium-high heat for about 10 minutes until lightly smoking.
- Carefully fry the roasted potatoes in batches for 3–5 minutes until golden brown.
- Transfer to a bowl and immediately toss with OPS seasoning while hot.
- In a separate bowl, mix mayonnaise, chipotle powder, and lime juice until smooth.
- Serve potatoes hot with chipotle mayo for dipping and enjoy!
