Ingredients

  • 8 large Yukon Gold potatoes, cut into bite-sized pieces
  • 3 tablespoons OPS Spice Blend
  • 3 cups oil for frying
  • 1 cup olive oil
  • 1 cup mayonnaise
  • 1 tablespoon chipotle powder
  • 1 lime, juiced

 

Instructions

  1. Preheat oven to 350°F.
  2. Place diced potatoes in a medium saucepan, cover with cold water, and add 2 tablespoons kosher salt.
  3. Bring to a boil, then immediately turn off the heat and strain the potatoes.
  4. Toss the strained potatoes with olive oil and arrange on a sheet pan.
  5. Roast in the oven for 10 minutes, or until the edges begin to brown.
  6. In a medium saucepan, heat 3 cups of oil over medium-high heat for about 10 minutes until lightly smoking.
  7. Carefully fry the roasted potatoes in batches for 3–5 minutes until golden brown.
  8. Transfer to a bowl and immediately toss with OPS seasoning while hot.
  9. In a separate bowl, mix mayonnaise, chipotle powder, and lime juice until smooth.
  10. Serve potatoes hot with chipotle mayo for dipping and enjoy!
